Ingredients
4 servings
4 ozcremini mushroom
or button
¼ cupolive oil
2 Tbsbalsamic vinegar
garlic powder
dry thyme
1lemon
juice from, separated
2 Tbsred wine vinegar
dry oregano
red chili flake
2 tspndijon mustard
2 headsromaine hearts
3tomatoes
small, diced
4 ozpepperoni
diced
2roasted red bell peppers
chopped
6 ozbaby mozzarella balls
drained
0.5red onion
sliced
salt
pepper
to tate
6basil leaves

Instructions
Step 1
-Set your oven to 350* and line a small sheet tray with foil.
-Cut the mushrooms in half and dress with 1 tablespoon of olive oil, the balsamic, garlic powder, dry thyme, salt and pepper. Toss well and bake for 15 minutes, or until nicely browned and softened. Allow to cool to room temperature.
-For the dressing, combine the red wine vinegar, remaining olive oil, mustard, juice from 1/2 lemon , chili flake and oregano in a small jar. Place the lid on top and shake vigorously tom combine. You can also whisk everything together in a small bowl.
-Slice your red onions very thin, then squeeze the remaining 1/2 lemon over the top and stir. Allow them to sit ~5 minutes.
-To finish the salad place the chopped lettuce in a large bowl then arrange the diced red pepper, mozzarellla balls, pepperoncini, pepperoni, cooled mushrooms and tomatoes neatly on top. Sprinkle with the basil leaves, more salt and pepper, and dress just before serving.
