Harissa Sausage Pasta

Instructions

Step 1
Remove the skins from the chicken chipolatas (de-case them), discard the skins & set the sausages aside
Step 2
Heat a little oil in a pan fry the diced onions till soft (2-3mins). At the same time, put the pasta onto boil & cook to pack instructions until al dente (reserve some pasta water for later!)
Step 3
Then add the minced garlic & chicken sausages and begin to break up the sausages into small pieces with a spatula.
Step 4
Once the chicken pieces begin to brown, add all the spices, rose harissa paste, tomato purée & mix well
Step 5
Stir in the cream cheese and 0.5cup of the pasta water & mix into a silky sauce.
Step 6
Add the al-dente pasta to the sauce & coat in the sauce (adding more pasta water here if needed to thin the sauce).
Step 7
Taste here & if needed, add more cream cheese to reduce spice or more rose harissa paste to increase spice.
