Instructions
Step 1
Preheat the oven to 180°C, gas mark 4; line a 20cm square cake tin with baking parchment.
Step 2
In a mixing bowl, use a wooden spoon to mix together the eggs, sugar, almond extract and vanilla until smooth.
Step 3
Add the ground almonds, flour, baking powder and melted butter; mix together until combined.
Step 4
Core and cut 2½ apples into 1cm dice, then stir into the mixture along with the chopped pecans.
Step 5
Pour the batter into the prepared tin.
Step 6
Slice the remaining ½ apple and arrange on top, then scatter over the whole pecans and flaked almonds.
Step 7
Sprinkle over the 2 tbsp caster sugar.
Step 8
Bake for 35-45 minutes until a skewer inserted into the centre of the cake comes out clean.
Step 9
Allow to cool, then cut into 9 squares and serve.
