For the semolina
Step 1
Take a pot and warm up the milk. When it starts boiling, add a bit of salt, white pepper and nutmeg and mix. Start then pouring the semolina but not all in once or else you will create clotes. Poor a handful of semolina, stir and then add more and stir again.

Cook the semolina according to its box, it might tame something between 10 to 20 minutes. While cooking the semolina you must stir continuously or else it might stick to the pot. The result should be a solid most mixture.

Once the semolina is ready, let it cool for 5 minutes and the add the egg yolk, grated parmesan and butter and stir. Once everything is well mixed together you can put it aside and continue with the recipe.

For the zucchini

Take the zucchini, wash them and trim off the stem ends. Cut the zucchini in half lengthwise, and the in half again so you have four pieces. Scoop the flesh out of the zucchini with a teaspoon. Leave a cauple of millimeter of flesh and try to do it carefully.

Preheat the oven and proceeded with the preparation of our stuffed zucchini.

Take now the zucchini and the semolina and stuff all of them with a spoon or a spatula.

Melt the butter and pour a little less tha half of it into thr baking dish.

Once they are all ready, ease them down into a baking dish. Pour the melted butter on top of the zucchini and the grated parmesan.

Once the zucchini will be baked you are going to see the semolina becoming browny and crispy.
