This creamy, crunchy sesame party is like a deeply spiritual umami experience that f*cks with your brain on first contact. Your taste buds’ initial impression will confuse you with a lil’ onion dip vibe, but then you’ll realize there is a very nutty sort of Asian-ish thing going on here, thanks to the soy sauce and fish sauce. (My mom Pepper always wonders where all her secret bottles of stinky delicious condiments disappear to, and this is exhibit A.) The other secret ingredients are powdered onion and garlic, which give so many dips their perfect dippiness.

1 Preheat the oven to 350°F. Place the sesame seeds on a small, rimmed baking sheet and roast until a deep golden brown, 9 to 10 minutes. Transfer to a plate to cool.

2 Combine the sour cream, mayo, sesame oil, soy sauce, fish sauce, mustard, onion powder, garlic powder, and cayenne. Add 2 tablespoons of the sesame seeds and 2 tablespoons of the chives. You can serve immediately, but the flavors meld even more after an hour or two in the fridge. Garnish with the remaining 2 tablespoons roasted sesame seeds and remaining tablespoon chives just before serving.
