Slow Cooker Sausage & Bean Casserole

Packed full of flavour and texture, this hearty meal can feed all the family, or cooked for one and and frozen to enjoy again and again. This slow cooked meal is perfect to come home too. Use sausages and stock free from animal products to turn this fibre packed meal into a vegan delight!

Ingredients
5 servings
10Sausages
1 teaspoonvegetable oil
1white onion
peeled and finely chopped
2garlic cloves
peeled and finely chopped
1green pepper
diced
1red pepper
diced
1orange pepper
diced
12cherry tomato
150ggreen beans
trimmed and cut into 3
2tins of Borlotti
beans, such as, Cannellini or Pinto
1 tablespoonsmoked paprika
1 tspdried thyme
1 tspdried oregano
2 canschopped tomato
1chicken stock pot
Instructions
Step 1
Brown the sausages, by heating up the oil in a frying pan on the hob and fry for 10 minutes turning regularly. Once brown, remove and set aside.
Alternatively, air fry the sausages in preheated air fryer for 6-8 minutes until brown.
Step 2
Preheat the slow cooker on high setting whilst you prepare the ingredients

Add the onion, garlic, peppers, tomato, green beans, tinned beans, smoked paprika, thyme, oregano, chopped tomato, chicken stock pot and 100ml of water into the slow cooker and stir to combine all the ingredients
Step 4
Add the cooked sausage to the slow cooker and stir

Set the slow cooker temperature to high for 5 hours, medium for 6 hours or low for 8 hours
Step 6
Serve in bowls immediately or, allow to cool for 1-2 hours and before putting them in your fridge or freezer. To stop the cold air in your freezer from drying out your food, place food in an air-tight container, wrap it well in freezer bags or freezer wrap Don't forget to label it!
