Instructions

Step 1
Let's wash and chop the potatoes. Place into a large bowl. Toss in olive oil. Sprinkle your salt, pepper, and harissa spice blend. Air fry at 425 for 30 minutes. Depending on your air fryer, you might have to toss the potatoes at the 15 minute mark to ensure even cooking.
Step 2
Bring a medium-sized skillet to medium-high heat. Cook your sausage for 12-15 minutes or until browned on all sides. Remove the sausages and let cool for a few minutes. Slice in preparation of adding them to your scrambled eggs.
Step 3
Crack the eggs in a large bowl (I used the one from the potatoes to save dishes - the residual oil and seasonings work well with the eggs). Add your milk into the bowl and whisk for 1-2 minutes. The longer you whisk, the fluffier the egg. Bring a skillet (I used the sausage skillet - again to save dishes) to medium heat and cook your scrambled eggs. Stir often to avoid eggs sticking to the bottom of the pan. Add your sausage to the eggs once they are close to being done.
Step 4
Once your potatoes and eggs are done. Let's get ready to roll burritos. Grab all the ingredients - scrambled eggs, roasted potatoes, tortillas, and shredded cheese. Place the tortilla down, add the potatoes and eggs, and then sprinkle with cheese. Roll the burrito and then place it seam-side down on a pan on medium-low heat to create a seal. Cook for about 1 minute on each side. Continue this process until you are out of ingredients. This recipe was enough for 8 burritos for us.
Step 5
Freeze all of the burritos! When you want to eat them - microwave them for 1 minute, flip, then microwave for another minute. Finish by cooking on a skillet for about 1 minute on each side (optional, but makes the final product so much better).
