Instructions
Step 1
1. Fry onion on medium heat in a spoon of oil/spray oil until translucent. Season with salt.
Step 2
2. Add ginger, garlic and chilli and fry for a couple of mins.
Step 3
3. Add mince and stir to break up any lumps. Cook for a couple of mins.
Step 4
4. Add tomato purée and chopped tomato and stir through.
Step 5
5. Add black pepper, cumin powder and coriander powder and cook on medium heat until mince has fully cooked through (around 20 mins).
Step 6
6. Once cooked, check and adjust seasoning, add fresh coriander and lemon juice. Serve with anything from rice, to pittas, stuffed in to peppers, topped on pizza.. it's good for just about anything and is a great fridge staple!
