Instructions
Step 1
Preheat oven 350° F. Grease loaf pan and set aside.
Step 2
Mash bananas and set aside.
Potato Masher
Step 3
Beat eggs for 2 minutes. Gradually add maple syrup, oil, vanilla and lemon zest. Stur in bananas.
Step 4
In a large bowl, combine flours, baking powder, and salt. Make a well in the center and stir in banana mixture. Blend until smooth, then turn into prepared pan.
Step 5
Bake 50-60 minutes until toothpick comes out clean.
Step 6
Let cool in pan for 5-10 minutes. Remove and cool completely. Serve.
