Binch Akara (deep fried bean fritters)
This is a Sierra Leonean snack known in krio as Binch Akara. It is very easy to prepare, the only annoying part is washing the beans. In Sierra Leone, food vendors sell it on street corners with onion gravy and bread roll.

Instructions
Step 1
Preheat oven to 180C fan
Step 2
First soak the beans with water for 20 minutes, then pulse in food processor
Step 3
Then wash beans to remove all of the skin
Step 4
Now blend with onions and 1/4 cup water
Step 5
Pour into a bowl, add cayenne, stock powder and salt
Step 6
Whisk till its light and fluffy (takes about 6-10 minutes)
Step 7
Fry in hot oil till golden brown
Step 8
Drain on paper towel
Step 9
Serve hot! Enjoy.
