Beets Salad with Feta Dressing

Complex flavors of sheep Feta is another excellent way to compliment beets. Adding ramps puree to the creamy dressing brings some gentle bite and a nice color. If you don’t have ramps handy, use garlicky chives or your favorite chopped and frozen herbs with fresh garlic. If you like a combination of earthy-sweet and pungent-salty, this salad is for you!
Both beet varieties are heirloom. Detroit red beets are the most popular, often described as “old standard.” Touchstone Gold roots have bright yellow flesh and retain their color when cooked. They are smooth, sweet, and tasty, highly flavorful.
Use your favorite method of cooking young beets. Conventional streaming will be faster and even quicker if you use pressure steaming. Roasting will take extra steps (like applying a thin layer of oil and wrapping the beets into a foil) and more time (up to 40-45 minutes at 375F).
Beets go well with an acidic dressing to balance their sweetness. It can be as simple as a good balsamic vinegar with some extra virgin olive oil. My Facebook friend shared her favorite way of serving golden beets with some Mayer lemon olive oil and Mayer lemon syrup — her salad is truly golden!

Instructions
Step 1
Clean and trim the beets. In a pot with a lid, bring one cup of water to boiling. Place a steaming basket with beets inside, cover, and steam for 15 minutes. Instant Pot instructions: Clean and trim the beets. Place them into the insert in a steaming basket and add 2 cups of water. Pressure steam them manually for 7 minutes with natural release.
Step 2
Let cooked beets cool down to room temperature. To avoid staining your hands while removing the skin of the beets, wear disposable gloves. Using your fingertips, rub the skin off.

Combine all ingredients in a blender jar and process until smooth and pale green. Adjust seasoning to your taste.

Spread the sauce on serving plates. Quarter beets and arrange the slices in the sauce. Add the toppings and serve.
