Instructions

Step 1
Preheat the oven to 180°C (fan).
Step 2
Rub the chicken in all the spices and leave to marinate while you prepare the veg.
Step 3
Peel and chop all the vegetables and chorizo.
Step 4
Pile everything into a roasting tin with some oil and rub it all together. make sure the chicken ends up on top.
Step 5
Cook for 45 minutes then add the drained black beans and a squeeze of lime juice. Return to the oven for 15 minutes.
Step 6
Finish with another squeeze of lime and crumbled feta.
