Watermelon Rind Stir-Fry

Yep, you saw right. Watermelon rind,
in a stir-fry! Don’t knock it until you try it because it is SHOCKINGLY GOOD. Its neutral flavour allows it to absorb the smokiness of the marinade and it adds the perfect amount of crunch.

Ingredients

Stir-Fry
0.5Watermelon
Remove pink flesh and skin and thinly slice rind
1Carrot
Grated
200gTofu
Pressed to remove excess water and shredded
0.25 CupCoriander
Chopped
2 TspSesame Oil
1 CloveGarlic
Minced
Marinade
Instructions
Step 1
Mix all marinade ingredients until well combined.
Step 2
Heat a fry pan over medium to high head. Add sesame oil and garlic and sauté for 1 minute. Add the watermelon rind, stir and cook for 5-6 minutes or until it begins to slightly soften. Add the carrot and tofu and cook for a further 2 minutes.
Step 3
Reduce heat and pour over the marinade. Cook for another 2-3 minutes, stirring frequently. Add the coriander, stir and remove from heat.
Step 4
Serve over rice or choice of grain and optionally garnish with sesame seeds and spring onion . Enjoy! Store in the fridge for 4-5 days.
