Instructions
Step 1
Peel and grate the potatoes then add to a bowl and sprinkle with salt . Let sit 5 minutes then pour into a tea towel and squeeze as much of the liquid out as you can

Step 2
Pour a little oil on a pan then set it to medium - medium low heat and add in the grated potatoes . Press them down very firmly so that they are all lining the base of the pan nice and tightly .
Step 3
Beat two eggs then add salt pepper garlic powder and 2 chopped scallions . Pour this over the potatoes then put a lid on .when the eggs are cooked on top flip the potatoes and cook a further 2 minutes and enjoy
