½ cupbran flakes cereal
½ cupoats
1 ¼ cupall purpose flour
¾ cupsugar
1 teaspoonbaking powder
1 teaspoonbaking soda
½ teaspoonsalt
1 teaspooncinnamon
1 cupmilk
¼ cupbutter unsalted
melted
2eggs
2 tablespoonsmaple syrup
1 teaspoonvanilla
1 cupfresh blueberries
½ cupbrown sugar
¼ cupall purpose flour
2 tablespoonsbran flakes cereal
crushed
2 tablespoonoats
¼ cupbutter
cold, cut in pea size pieces
1 teaspoonvanilla
¼ teaspoonsalt
Instructions
Step 1
Preheat oven to 400 degrees
Step 2
Line 2 muffin tins with liners
Step 3
Combine bran flakes, oats, flour, sugar, baking powder, baking soda, salt, and cinnamon and set aside.
Step 4
In separate bowl. Combine milk, melted butter, egg maplw syrup, and vanilla. Slowly add dry mixture to wet mixture until incorporated. Gently fold in blueberries. Do not overmix.
Step 5
Mix streusel topping in separate bowl. Add brown sugar, flour, crushed bran flakes, oats, chilled butter, vanilla and salt.
Step 6
Spoon mixture in muffin liners about 2/3 full and put 2 tablespoons streusel topping on each.
