Step 1
Mash the banana in a large bowl. Add the oats, yogurt, cinnamon, and oil. Mix well to combine.
Step 2
Heat a large nonstick skillet over medium heat. Transfer the oat mixture to the skillet. Spread it out into an even layer and cook for about 5 minutes, undisturbed, or until cooked through and just crispy underneath.
Step 3
Scramble the mixture and cook for about 5 minutes more, or until golden brown, mixing frequently. Add maple syrup and cook for another minute for sweeter oats. Serve as is, or with nondairy milk, protein powder, and fresh berries.
