Ingredients

¾ cupap flour
½ cuppowdered sugar
⅔ cupcocoa powder
1 cupsugar
¾ tspsalt
2eggs
½ cupvegetable oil
2 Tbspcoffee
or water
½ tspvanilla
½ cupchocolate chips

Instructions
Step 1
Preheat oven to 325 degrees. Grease an 8x8 baking pan with nonstick spray. Line with parchment paper, with overhang on all sides, then grease the paper.
Step 2
Sift flour, powdered sugar and cocoa powder into a medium bowl. Add granulated sugar and salt and stir to combine. Whisk eggs, oil, coffee and vanilla together in a large bowl. Sprinkle in the dry ingredients and mix until just combined. Fold in chocolate chips.
Step 3
Add to pan, smoothing the top with a spatula, and bake for 38-40 minutes or until a toothpick comes out with only a few crumbs. Cool completely in the fridge.
Step 4
Add coffee and cognac to a shallow dish. Quickly dip ladyfingers one at a time and place over the chilled brownie.
Step 5
Place egg yolks and 2 Tbsp sugar in a medium bowl and beat with an electric mixer until pale yellow and doubled in volume.
Step 6
Whip cream in a separate bowl with remaining 2 Tbsp sugar until medium peaks form. Add mascarpone and whip until smooth and stiff. Gently fold into the egg mixture. Pour over the ladyfingers and smooth the top. Refrigerate 4-24 hours.
Step 7
Remove from pan and dust with cocoa powder and chocolate shavings. Cut into 9 slices, wiping the knife clean after every slice.
