Chope the coriander

Slice the avocado

Heat up a pan on medium heat, add the oil and onion, and cook for 5 minutes until translucent

Add the garlic, mushroom, and spice mix, and cook for another 2 minutes
Step 6
Add the tomato paste, walnuts, and lentils
Step 7
Reduce to low heat and let it simmer for 5 minutes

Build in the following order: tortillas, queso cashew, lentil/mushroom mix, red cabbage, avocado, jalapenos and coriander
