Ingredients
4 servings
3 cupscauliflower florets
4 ozmacaroni pasta whole-wheat
or elbow, uncooked
1Italian chicken sausage
2 slicesturkey bacon
1 Tbspbutter
1 Tbspbuttermilk pancake and waffle mix
1 cupmilk
fat-free
¼ tspsalt
ground black pepper
0.5cheddar cheese
low-fat, shredded
6 TbspParmesan cheese
grated
¼ cupbread crumbs
salt
garlic powder
paprika
thyme
Instructions
Step 1
Heat to 350 degrees F
Step 2
Bake cauliflower. Cook macaroni according to the directions on the package. Drain and set aside.
Step 3
Slice the chicken sausage into thin rounds and chop bacon into small pieces. Place in a frying pan over medium/high heat. Cook until fragrant and all sides are browned. Remove from heat and set aside.
Step 4
In a large saucepan, melt the butter over low/medium heat. Add the Kodiak Cakes and stir until well combined. Slowly whisk in the milk and stir constantly until slightly thickened. Add in the sea salt, black pepper, cheddar cheese and 4 Tbs. of the parmesan cheese. Stir until the cheese is melted into the sauce. Add the cauliflower, macaroni, sausage and bacon to the sauce. Stir until well combined. Pour into an 8x8 baking dish.
Step 5
Toast the Ezekiel bread until browned on both sides. Break into pieces and pulse in blender until it turns into crumbs. Combine the bread crumbs, 2 Tbs. parmesan cheese, sea salt, garlic powder, paprika and thyme together in a bowl. Sprinkle over the top of the macaroni. Bake for 25 minutes. Divide into equal servings and enjoy warm.
