Instructions
Step 1
prepare the kale - remove the stem & the thick parts, chop the leaves, toss into a bowl, add salt and massage a little to tenderize them a bit.
Step 2
roast sunflower seeds and cashew nuts until they're a little brown and crunchy, let them cool
Step 3
add thinly sliced onions, apple chopped to thin pieces and diced beetroot, also roasted nuts and seeds and parmesan cheese shavings, mix well.
Step 4
prepare the dressing - grate the zest off a lemon, then juice it. add lemon zest, juice, olive oil, honey & slices into the bowl and whisk untill it all comes together
