Step 1
1. Heat 1 tbsp of oil in a large deep frying pan over high heat. Pat the steak fry with kitchen paper, season well and fry for 5-6 min, turning once. Transfer to the plate to rest
2. Carefully wipe the pan clean with kitchen paper. Return to the heat and add the remaining oil. Fry the onions for 5 min until softened, then stir in the mustard seeds and curry paste, and cook for 1 min. Add the basmati rice and pour over the vegetable stock. Season the mixture lightly. Bring to the boil, then lower the heat, cover and simmer gently for 19 min. 3. Stir in the cauliflower and broccoli, cover and cook for further 10 min, until the stock is absorbed and the rice and veg tender. Stir in the peas and heat until warm through.
4. While the rice is cooking, slice the steak into strips. Add to the finished rice. Sprinkle over the chives and check the seasoning. Serve immediately.
