Instructions

Step 1
In a large crock pot, add the olive oil over a medium heat.
Step 2
When the oil is hot, add the garlic, ground coriander, ginger and onion, sautéing for a few minutes until aromatic.
Step 3
Add the curry paste and stir to break down, before adding chickpeas, soy milk, lime juice and maple syrup.
Step 4
Add the cauliflower and cook for 8 minutes, stirring occasionally.
Step 5
Add the zucchini, and mushrooms cooking for 5-6 minutes until tender.
Step 6
Serve into bowls with brown rice, lime wedges, herbs and chopped almonds.
