Step 1
Preheat oven to 180C
Step 2
Cover the bottom of the ovenproof dish with 3 tbsp tomato sauce, and spread evenly.
Step 3
Now, working with one pastry sheet at a time, brush it with butter, then scrunch the phyllo up accordion style horizontally.
Step 4
Starting at one end of the folded phyllo, roll it into a loose spiral and place the phyllo into the centre of the baking dish.
Step 5
Repeat with the rest of the phyllo sheets and butter, placing and forming around the centre spiral to form a concentric circle, packing them in tightly.
Step 6
Now, if you got any melted butter left, combine it with the remaining tomato sauce and pour it on top of your phyllo pastry. Use a brush to spread it evenly. Bake for 40 minutes or until golden and crispy.
Step 7
Then, add shredded mozzarella on top and bake for another 15-20 minutes.
Step 8
When ready, let it cool a bit and garnish with basil leaves
