Instructions
Step 1
Heat the oil in a large saucepan and cook the onion for a few minutes until soft.
Step 2
Add the curry powder, ginger and cook for 1 min more.
Step 3
Add the sweet potatoes, lentils, chopped tomatoes, and stock.
Step 4
Bring to the boil then cover and simmer for 20 mins, until the lentils and sweet potato are soft. Stir now and again to stop it sticking.
Step 5
Stir in the chick peas and coriander, cook for another 4-5 minutes.
Step 6
Serve with rice, flat bread or naan bread and a green salad.
