Instructions

Add all the ingredients in a large bowl and mix well.

Line muffin tin with parchment cups and fill them up with the carrot mixture. Pack the cups almost all the way up.

Bake at 350 for 35 minutes. Let cool just until you can handle the muffins and transfer them to a cooling rack.

*can sub pecans with walnuts * sugar is optional. The muffins will be somewhat sweet because if the carrots and apple. Use sugar as you like.
