Instructions
Step 1
Boil your potatoes for about 45 mins or until soft, drain and remove the skin.
Step 2
In a bowl, mash your potatoes, add flour, corn starch and a pinch of salt and paprika.
Step 3
Mix everything until smooth. Depending on the potatoes you use, the dough could be a bit sticky, but that’s ok.
Step 4
You can add a tiny more extra flour, but don’t add too much flour otherwise you’ll end up make gnocchi instead!
Step 5
Shape the dough into a 2.50cm (1 inch) snake and cut into a 3cm (1.5 inch) sections.
Step 6
Press the tines of a fork into each section of potato to create a ridged pattern.
Step 7
Heat vegetable oil to 170C/350F and fry your potato pillows for about 5/6 mins or until crispy.
Step 8
Drain and serve with some more salt and paprika.
