CREAMY PEANUT DAL 🥜 a nutty take on an Indian staple 🤩 👉🏾INGREDIENTS👈🏾 -1 cup red lentils (washed + drained) -2 cups water -1/4 tsp turmeric powder -4 garlic cloves -1 white onion -1/2 tsp asafoetida -1/2 tsp coriander powder -1/2 tsp chilli powder -4 tbsp coconut cream (hard bit at the top of coconut milk can) -3 tbsp peanut butter -juice of 1 lime -fresh coriander 👉🏾METHOD👈🏾 -mix washed lentils, turmeric + salt then simmer on a low/medium heat for 20-30 minutes. Stirring often. -now separately fry the onion + garlic in 2 tbsp veg oil for 5 minutes on a low/medium heat then add the dried spices + fry for another 5 minutes. -add the coconut cream, peanut butter + lime then combine into a creamy sauce. -stir the peanut sauce + coriander into the lentils then serve with roasted peanuts on top + rice or breads 😊

Instructions

Step 1
-mix washed lentils, turmeric + salt then simmer on a low/medium heat for 20-30 minutes. Stirring often.
Step 2
-now separately fry the onion + garlic in 2 tbsp veg oil for 5 minutes on a low/medium heat then add the dried spices + fry for another 5 minutes.
Step 3
