I looked at so many gf donut recipes, and they all called for commercial 1:1 flour blends, which I don't keep on hand. I used 1/2 cup each white rice and sorghum plus 1/2 tsp xanthan gum. These came out on the heavy side. I probably should have added a little starch to lighten it up and only 1/4 tsp of xanthan gum.
This called for way too much cinnamon sugar. There's more left on the plate than stuck to the donuts. They're also a little salty, which is my bad for using Earth Balance sticks instead of coconut oil. I should have skipped or skimped on the salt. The batter seemed very thick to me. I added a couple tablespoons of milk, but didn't want to screw up the ratios too much. It was thick enough to easily spoon into the pan without wasting a plastic bag.
Debating playing with it again vs just going to a yeast raised recipe next.
But still, my first donuts don't suck!
