This was okay, but I needed extra soy sauce and siracha when done to give it some extra flavor. The ginger seemed a vague measurement, so I used 4 grams of grated ginger, which seemed to work. I used 90g of soba. I used 100g of baby corn because I used can baby corn and didn't know how big the pieces were supposed to be. I also used 8 mushrooms. I think the term simmer should say bring to a light boil because my mushrooms were still chewy. I found out bok choy is not for me and so I will not use it next time. Overall, with those slight modifications, I made the 2 serving amount, and each serving came out to 400 calories. Hopefully, this helps someone else who wants to make this.
