Hey everyone! This was Monday night dinner- super yom! But I did make a lot of changes
1) I can’t digest any of the bell peppers if not cooked thoroughly- so I precooked the diced bell peppers with garlic and onions before adding to baking tray.
2) you can certainly use vegan sausages for this, but I do not think vegan foods looking like meat are safe- they have a weird combination of foods which should not be eaten together Ayurvedically. ( I am an Ayurvedic practitioner as well as a western Dr). I thoroughly cooked the sausages before adding to tray.
3) added some chipotle chilli to the beaten eggs.
It gives it a wonderful kick 👍🏽
