-Discovered last-minute that we were out of white wine vinegar, so used equivalent amount of rice vinegar, a couple pinches of salt, and about a teaspoon of balsamic vinegar.
-opted for two small shallots&jarred peppers
-used the entire English cucumber(average size) and all of the dill and mint in the small herb pouch. All would have gone to waste otherwise, and the finished result was perfectly balanced
