These are the best cookies I’ve had in awhile ! I’ve never had great luck with making cookies, but these were absolutely perfect. It says put 2 tbsp lemon juice, go ahead and put 3. That’s what the recipe says to do if you’re a “lemon lover”, but after making them with 3 tbsp I would put even more in. These absolutely blew my mind as they were, but I just love a little bite of sour in my desserts. It sounds like a lot of juice, but the cookies are sweet regardless so that amount of lemon juice and zest will not overpower. It also says in the literature part of the recipe to add a tsp of vanilla extract if you like them sweeter, I would go ahead and add it even if you don’t want it more sweet. The vanilla doesn’t make it “sweeter” it just makes the flavor more complex as opposed to just the butter and sugar flavor. Wonderful cookies, highly recommend making them ! mine were gone in one day !
