Updated to add- I tried another similar recipe a few weeks ago (because I didn't have enough bananas). When I told my kids I was making waffles this morning, they begged for "the ones with more bananas (this recipe)." I'll just make sure to have enough bananas from now on, when I decide to make waffles!
These were fast and good! I doubled the batch and it made 11-12 large waffles using 1/2 cup per waffle. I mixed the batter in my blender, and the only downside is that it can only hold one double batch, and I needed two double batches (hello family of 7!). I did what another reviewer suggested and replaced 1/4 of the oats with flour (gluten-free). For the 2nd double batch, I used frozen bananas, and it turned out great too! This might just be me new go-to waffle recipe!
