This chewy texture is something that really satisfied a kind of chewiness craving that usually leads me to eating something like licorice fruit leather etc. So that was great. The sun-dried tomatoes were sun sugar tomatoes we dehydrated at end of summer and stored in olive oil in the fridge. Hard to overstate the BRIGHTNESS this added to the flavor, my husband couldn't figure out what could add that much.
Great recipe, would def do again! Did get some carb cravings later (a thing i worry about when eating a pasta rice or other grain-based dinner), but I had just started doing spin again same day which also drives hunger a lot.
We had it with salmon cooked in same oven same time/temp with some of the pesto spread on top and some lemon rind gratings. Was perfect with it.
