I found 1.5 lbs of potatoes was 5 medium, which I cleaned, removed eyes, pricked all over with a fork, and microwaved in a bowl covered with plastic wrap for 6 +3 minutes. Probably should have stopped at 6 or 7, since they were quite soft. Used half a large onion and a 12-inch skillet. For the final cooking steps, I probably started with the heat a little too high and went for a bit too long before flipping; it was pretty brown on the first side, but not really that set. 4 minutes would definitely not be enough cooking time so I adjusted the recipe to reflect that. Ended up a bit lopsided. In the end, it was kind of bland (definitely needed hot sauce or some other kind of extra seasoning), but I love the basic dish and may try a 2-serving version for lunch!
