Super veggie is one of those recipes that surprise me the most with its brutal simplicity while delivering a complete, yet pristine taste. Its something that I could truly eat every day and is just unbelivably delicious. For best results, I prefer to steam the vegetables and fry the mushrooms in a pan with olive oil and garlic at low heat. I also like to add half an avocado sliced as garnish alongside with some wakame algae strips. The dressing (2limes+olive oil+apple sauce vinegar+cumin) makes it possible to completely eliminate salt, while keeping a spicy and fresh feel.
