Must admit I made some pretty big changes to the cooking method here; used all the ingredients in quantities directed (except bacon), but chopped the cabbage finely instead of into wedges. After browning the onion in the pot, I just added all the other ingredients, covered, and cooked until the liquid reduced and was kinda saucy.
It was delicious!! Used it to feed a crowd, everyone loved it. Would definitely make again, perhaps think about playing with some different flavours (caraway? cranberry?) or finding a veggie/pescatarian sub for the bacon.
