Absolutely amazing recipe and just what I've been missing - took a bit of learning but I'll get better at it with a few more attempts. The flavours were spot on!
SECOND ATTEMPT: Delicious even if you forget the lemongrass / realize it's gone bad and had to skip it (you can tell it's not there but still good). Didn't have mint so added extra cilantro... Have learned cooking the chicken on high heat to char the outside in small batches, setting aside, and then cook the remaining marinade down until it thickens then reintroduce the chicken to finish cooking after a quick slice is the best way. Sooo good.
