Very yum! Great side dish or vegetarian main for lunch or light dinner. Easy to whip up. I didn’t have fresh limes so I used lime juice and it still tastes great. I can see why fresh limes will be much better though. I also added thin asparagus since I needed to use it. I don’t like raw peppers, so i sautéed the peppers and asparagus for a few minutes before adding. Chopped avocado on top and served with pulled pork.
