I only had about 3/4c banana so I had to adjust. I used 1/2 c applesauce (unsweetened) and added about 1 tsp banana flavoring (happened to have on hand). I also left out nuts/chips (preference). After mixing in flour, I let it sit about 5 minutes to hydrate before baking. Baked for approx 45 min. Came out perfect! Would not recommend exchanging more than 1/4 c applesauce unless you have the flavor or it will have little banana taste.
