Good quick recipe. Longest part was making the enchilada sauce. I would try to make it a bit silkier next time..maybe a dash of cayenne or a Mexican spice and also use more authentic cheese for fuller taste. But great recipe I just used what I had in my kitchen and it turned out tastey.
