The slightly cooled boiling water in this recipe is important as it helps create softer roti, due to how it’s absorbed differently by the proteins and starch in the flour. We teated this recipe at different temperatures and cooler water for this recipe creates tougher roti. Some roti recipes call for cold water but that’s a completely different recipe to ours.
