Soo I missed the note about soaking the black lentils for 6-8 hours, and ended up boiling them for close to 2 hours, and they were still undercooked (lesson learned!).
That said - the rest of this recipe was delicious. That romeseco sauce is amazing and will absolutely make again. Didn't find hazelnuts so substituted with extra cashews and some almonds instead. Still delicious.
