Doubled the recipe and used 2 cans hominy, 5 cans pinto beans. Didn't have guajillo peppers but seeded and broiled jalapenos in the toaster oven for about 10 mins (to reduce spiciness for my toddler) chopped and added with garlic. Added a chopped bell pepper with the onion. Added a little extra olive oil after simmering. Came out delicious.
