I used 3 eggs to 3 cups of potatoes, added half pound of chive sour cream, salt and pepper to taste. This is a go to holiday left over meal that dates back before the great depression. Add some diced turkey and gravey. Or just some butter. Use a icecream scoop to pour into the hot oil or butter. You need a relatively hot grittle or skillet for best results. Drain on cardboard before serving.
