Omitted wine, used a dash of apple cider vinegar. Could use less beef stock. I prefer my stews a bit drier. Ended up putting in thinly sliced russet potato at the beginning in hopes of thickening. I'm not sure it worked. Added unpeeled russet potatoes about 2 hours before finish. Would prefer red or Yukon but none. Omitted beef bullion. Probably would have helped with taste, but did not have any. Family liked it.
