This recipe was my first attempt with our instant pot. I was scared. But it came out super well. Potatoes were perfectly tender, meat melts in your mouth soft. The tomato paste may have added additional sweetness to the recipe that I think takes away from the cozy warmness of a normal beef stew so we will decrease this in our next attempt. Also, we want to add a bit of spice just to add more depth and warmth to this dish, just my preference, but this was a great baseline recipe to start with and then make your own.
