The roasted veggies were so good! Took a while, but I made it for thanksgiving dinner which was great! Didn’t really need to add the vinegar, but it was good either way. Also didn’t bother to add the cornbread croutons as that seemed like a lot of extra effort. So it was just veggies and mozzarella. I really enjoyed it. Note, the veggies did not cook at the same rate, so I’d recommend keeping the different kinds of veggies separate on the pan so you can easily take one kind out and leave the others in. I think the order was maybe yellow squash finished first, then zucchini, butternut, carrots, parsnips. It was a few, weeks ago so not 100% on the order, but you get the idea. I was trying to fish out all the butternut squash at one point which took a while because the rest wasn’t done.
