This is a HIT at party buffets. Delicious on its own, scooped up with tortilla chips or a wider Mexican spread.
Note: I would recommend discarding the inside of the tomato’s so it isn’t too wet. Also mix salt/ seasoning at the last minute before serving. The salt extracts all the juices and pools all the liquid at the bottom of the bowl the longer it is in there. Still delicious, but you may want to drain that liquid if you have leftovers the next time day.
