Okay so clearly I used phyllo instead of puff pastry, but aside from that I kiiiiiinda stuck to the recipe in terms of ingredients. Used kale instead of spinach as its locally available to me, spinach is out of season currently. Also used chunky leftover mashed potato instead of the raw chopped; I would definitely recommend that as a time saver as it thickened the mixture really well and cut out a lot of cooking time. I used a TINY fraction of the chilli powder recommended because i am terrible with heat. Literally just a sprinkle. I didn't bother blending the onion mixture, it just felt like too many dirty dishes, and besides I quite a chunky pie filling.
It tastes SO much better than any other british-indian style food I've made before, and I don't know why but I'm not going to ask too many questions!! I used super fresh garam masala which probably helped. I would be really happy to serve this up to guests or as a potluck dish, it's such a brilliant veggie option (I am the household veggie so can confirm).
Makes about 6 servings if you also have something else to eat with it.
